Chicken Rice Porridge With Satay

Cooking ingredients

(for 4 servings)

  • 2 1/2 cups of rice (cup measuring magic com)
  • 15 cups of water (10 cups of raw water + 5 cups of boiled water)
  • 1/2 tsp salt


  • 1/4 chicken breast fillet
  • Satay Ingredients:
  • 5 pieces of chicken hearts
  • 5 pieces of chicken gizzard


  • 1 grain of garlic
  • 3 red onions
  • 1 cm ginger
  • 1 cm turmeric
  • 1 cm galangal (crushed)
  • 1 stalk of lemon grass (crushed)
  • 1/2 tsp coriander powder
  • 1/4 tsp ground pepper
  • 1 candlenut
  • 500 ml of water (according to taste)
  • 1/2 tsp salt
  • 1/2 tsp mushroom stock
  • Fresh cooking oil (for frying)


  • Shrimp crisp
  • Fried onions
  • Celery leaves sliced (optional)
  • Soybeans (optional)
  • Sambal for adults

How To Make :


Wash the rice thoroughly, then add 10 cups of water from the measurement above, cook over low heat, don't stir it first, let it boil like the 3rd photo.


If the water has set, you can stir occasionally, if the porridge is still rough, add 5 cups of the remaining boiled water. Give a little salt according to taste, if the porridge is still rough, you can add a little more boiled water, until the texture you want, if I have the texture right, like in photo no. 2.

For the gravy ingredients :

Blend all the seasonings for the sauce, except galangal, lemongrass and bay leaves. Put the chicken fillet and gizzard liver in a pan, add the ground spices, add water, add salt, cook until the gizzard is tender. 

I remove the chicken and chicken liver first, then boil. return the gizzards,.then fry the chicken and liver gizzards,just for a while,then shred the chicken with a fork,don't throw away the chicken gravy,if there's a little left over,you can add more with boiled water,cook until it boils,ready to use as a slurry sauce.


Cut the chicken liver and gizzard,.skewer the satay skewers. Chicken liver satay for the little ones and gizzard satay for the adults.
