Levain Bakery Home Made Bread - Let's Try It

 


COOKINDO - Hello cookindo friends, this time we will give you a delicious bread recipe, namely levain bread, let's cooking.

Cooking ingredients :

  • 285 high pro flour
  • 135 grams of UHT milk
  • 90 grams of strong levain
  • 40 grams of sugar
  • 2 egg yolks
  • 35 grams of unsalted butter
  • 1 tbsp cold UHT milk
  • 1 tsp salt

How To Make :

STEP 1

Mix flour, sugar, egg yolk, leaven and UHT milk. Mixer until combined.


STEP 2 

After the dough is proof and combined, add butter. Mix again until all the butter is combined. Add salt and 1 tbsp cold UHT milk. (1 tablespoon of UHT milk works to melt the salt, so that it is easier for the salt to blend into the dough).



STEP 3

Mix on medium speed until smooth and elastic. Rest until it expands 2x. 

Note: Because this uses natural yeast, the fermentation process is quite long. Plus I made it in the afternoon and the weather was right when it was raining so the temperature was a bit cold. The fermentation time of the dough is even longer. This is mine until it grows really big because I just sleep. Here I finished the dough at 4 pm, it grew as big as the photo below around 4 in the morning.

STEP 4

Divide dough into 3. Flatten, fold in 3/lengthwise, roll. Pour into a loaf pan that has been lined with baking paper. Rest again until it doubles in size. Brush the dough with UHT milk. Note:
Here is my dough ready to be baked around half past 10 am.



STEP 5

Preheat the oven, bake the dough at 180°c for ± 30 minutes. Once cooked, remove from the pan, brush the surface of the bread with butter.



STEP 6

Wait for it to cool, cut into pieces. 
Note: -Because 100% uses natural yeast (levain), the taste of the bread is slightly sour. But for the aroma, I think this is better than instant yeast.




STEP 7

Overall I'm quite satisfied with the results, because even without instant yeast it turns out that it can also make bread.

It's just that the edges of my bread are still sticky, even though I've used baking paper. So it doesn't look pretty. As for the texture, this bread is really soft and the inside is moist and tends to be 'wet'.
